If I am settling down at the end of a hard work day, often my go to is an Irish Whiskey. There is something that is approachable and easy on the pallete that just comes the nerves. Irish has seen an increase with volume of distilleries that have been built over the past 3-5 years but they have also learned from their American counterparts how to source and age some of the best blended whiskeys around.

Unfortunately, some of the most interesting whiskeys have not made it to the states as of yet. As interests grows and production increases, I am sure that we will be in for a treat. If nothing else, it’s a great place to plan a trip and visit in order to bring back a few of your favorites.
