If I am settling down at the end of a hard work day, often my go to is something from Ireland. Irish Whiskey is approachable and easy on the palette. Often at the end of the week, I think about the trips to Ireland that I have and wonder what it will be like when I get to go back. Irish Distillers has seen an increase in demand for Irish whiskey over the past 3-5 years but they have also learned from their American counterparts how to source and age some of the best blended whiskeys around.
