If I am settling down at the end of a hard work day, often my go to is something from Ireland. Irish Whiskey is approachable and easy on the palette. Often at the end of the week, I think about the trips to Ireland that I have and wonder what it will be like when I get to go back. Irish Distillers has seen an increase in demand for Irish whiskey over the past 3-5 years but they have also learned from their American counterparts how to source and age some of the best blended whiskeys around.

Unfortunately, some of the most interesting whiskeys have not made it to the states as of yet. As interests grows and production increases, I am sure that we will be in for a treat.
